1.) Order three to five pounds (per person) of fresh boiled crawfish.
2.) (Optional) Put on a special bib to protect clothing. (This allows a little more freedom with the crawfish.).
3.) Grab the nearest crawfish off the pile. Don't eat them if they are discolored or have a streight tail...they may have been dead prior to cooking...not good.
4.) Hold the crawfish with your left hand and gently twist off the tail.
5.) (optional) Take the head and suck the hot, spicy juices out of it.
6.) Take your little finger and scrape the inside of the body (de-vaining).
7.) Squeeze your thumb and forefinger at the sides of the top of the tail, causing the shell to break then remove the meat and eat.
8.) Cool off with your favorate beverage; it's spicy so you should be sure to have plenty of cold beverages handy.
